more of What I Eat





#1 Breakfast- This is a detox/liver support breakfast of beets, asparagus and dandelion and nettle tea. The beets are from Trader Joe's, and they are steamed and peeled = ready to go! I season them with garlic salt and dill.
#2 Breakfast- scrambled eggs, Hempler's bacon, asparagus & gluten free toast. This picture is my husband's breakfast and he also had a bowl of plain, full fat yogurt with blueberries and homemade granola.
#3 Breakfast- "Soup" made from zucchini ribbons, spinach and bone broth and topped with two crispy fried eggs and a sprinkle of cheese (pecorino romano, sheep cheese). I really love making a breakfast soup using leftover meat and greens and/or zucchini and bone broth...warm and yummy and an easy way to get in some veg first thing in the morning.
#4 Dinner- Butter lettuce salad with avocado oil and salt n pepper and homemade BBQ chicken pizza. I LOVE that I can make pizza now I have some cheese back in my life! I use Trader Joe's gluten free pizza crust, BBQ sauce, spinach, green onions, chicken, bacon, and either sheep cheese or goat cheese. I sometimes add green peppers also, and garlic and onion powder.
#5 Breakfast- Skillet meal of leftovers all fried up together! Beets (red and gold), turnip or rutabaga(wasn't sure which I bought! Lol) baby spinach, brown rice, purple cauliflower, and beef roast. I love batch cooking so that I always have healthy ingredients on hand to throw something like this together.


#6 Dinner- Fried eggs, bacon, asparagus, GF toast, and wine. Yes, we are classy like that. Ha! This dinner was just for me and Brian, after the kids went to bed. We got home late from something and the kids had eaten already. This took about 10 minutes to make. There's some fast food that you don't have to feel guilty about!
#7 Lunch- Turkey Butternut Curry soup, with carrot sticks and homemade GF cornbread with butter and honey. I love this soup. Turkey, butternut squash, sweet potato, chicken broth, spinach, bacon, pecorino romano cheese, and a few spices, including curry. I love soups, since they a great for batch cooking and having on hand for any meal. I eat soup for breakfast often. Yum.
#8 Dinner (outside!)- Roasted asparagus and Brussel sprouts with bacon, baked sweet potato with butter and cinnamon and nutmeg, and tuna cakes. Just started making fish cakes recently and we are loving them! Also, the key to delicious Brussel sprouts is to caramelize them....so good!

I haven't posted in over a year.  I have six drafts that I started writing and never posted because I just couldn't decide what to say, with all the current world events and how I was feeling emotionally and mentally, (kind of all over the place), so....it has been quite awhile since I updated on where I'm at in my health journey. I am very happy to say that, even with the world being turned upside down, I was still able to keep that new level of health I had reached, and I am now doing better than ever. Updated Supplement Protocol

This is my current protocol of supplements we are using to support my body in healing my gut, hormones, and overall health. I am posting this partly to document my progress, and also to share what is working for me,  and to maybe give people ideas to ask their doctor about.
