My Fish Cakes Recipe -(Paleo)-

I am trying to incorporate more fish into my diet, and these delicious fish cakes are a new family favorite! They can be made with tuna or salmon, salmon having slightly more to offer nutritionally; high Omega 3 fats, vitamin D, and selenium. (and more!) Fish is so good for your brain and heart, and can improve your mood, weight, and overall health. Interestingly, the selenium in fish helps keep our bodies from absorbing the mercury found in fish! God's good design :) This article explains that in more detail, if you're a "nerd" like me and love learning about food.
Anyway, on to the recipe!
Ingredients-
3 cans salmon, tuna or sardines
3 TBS mayonnaise
3 TBS coconut flour
3 eggs
3 tsp mustard
1/4 tsp salt
pepper
1/4 cup chopped green onions



(1) Open canned fish and empty into med/large bowl. The fish I use has no added water, so I pour all the juices in too, no draining! Try to keep the fish somewhat off to side. Add the coconut flour to the juices and stir with a fork to absorb the liquid.
(2) Once the coconut flour is moistened and juices absorbed, use the fork to break up the fish and combine with the flour. Next, add the mayo, mustard, eggs and salt and pepper. mix well. add in the green onions. mix to combine.


(3) Heat pan ( I use an enameled skillet) over med high heat. Add butter to thoroughly coat pan.
(4) Scoop up about two tablespoons worth, or a palmful, of the fish mixture. I like to make it into a ball and then flatten. Place in pan and fry about 5 min per side or till golden brown. Sometimes the heat needs to be adjusted slightly lower. They can be hard to flip so don't overcrowd the pan.

This batch makes about 20 fish cakes, if you makes them the size I suggest. you could also make them bigger to make fish patties, adjusting the coking time accordingly.
Notes****
These can be completely Paleo if you use paleo mayonnaise. (I didn't this time)
The fish I get (and recommend) is Kirkland Wild Pink Salmon or Wild Planet Wild Albacore Tuna. Both available at our Costco, these fish are healthier and a cost effective way to get more fish into your diet.
Also, as you might have noticed, the measurements for this recipe are very easily adjusted to suit your needs. The basic recipe is:
1 can fish
1 TBS each coconut flour and mayo
1 egg
1 tsp mustard
salt, pepper, and green onion to taste
