Breakfast scramble- grated sweet potato, Kerrygold cheese, spinach and eggs
Low carb GF pancakes. The recipe called for stevia, but I used a couple teaspoons of coconut sugar instead, since I personally am more concerned with eating whole foods than strictly low carb.

Beef Broccoli at P.F. Chang's. Mmm! Last Friday night and Saturday I got to go out with my sister and two aunt that are our age for a Girl's Trip. Fun because we haven't doesn't it in two years, but sad because it was also a goodbye trip for my sister who is moving out of state soon. ๐Ÿ˜ช๐Ÿ˜˜
Also from our girl's weekend trip, a beef enchilada from Las Brisas.
Family dinner of split pea soup, rotisserie chicken, garden fresh sauteed green beans with bacon and garlic, more fresh veggies and toast.

Sophie and Nathaniel we're very well behaved and waited patiently for 40 min while I had an appointment to check my supplements, so I took them to Rocket Donuts for a treat๐Ÿฉ I love their GF chocolate frosted donuts. (Usually I get the one with no sprinkles, but they were out if those ๐Ÿ˜)

 And since life and diet are about balance, sometimes I just have cauliflower puree for a meal.
Fish cakes (my recipe), sauteed cabbage, carrot and onion, HM dressing, and fresh corn on the cob.

I've mostly been eating lettuce roll-ups lately, but I did have this sandwich with ham, avo mayo, cheese, avocado and spinach. ๐Ÿ˜
Kids in bed, vanilla ice cream with a tsp. of peanut butter and chocolate sauce, and a stack of cookbooks from the library....sounds like a great evening!
Omelette with cheese and greens, oatmeal with tasty toppings, a fruit platter and kombucha. I had omelette and kombucha, the kids had some of everything. And they were still hungry an hour later... Lol
Easy, delicious dinner of roasted potatoes (mixed baby and sweet)kale and bacon. Crowd pleaser๐Ÿ˜
My lunch- butter lettuce with HM dressing leftover fish cake, and broiled asparagus. This was so good.
Not very photogenic, but super yummy: BBQ chicken with sour cream and cheese (which the rest of the family ate on buns as a sandwich) and a side of good ol' cauli puree.

Dinner- I love making breakfast for dinner when I don't feel like cooking or have to make dinner fast. Scrambled eggs with spinach, kidney bean, bacon, and GF toast with cashew butter, honey and cinnamon. Dinner- steamed broccoli, Alexia's sweet potato fries (love that Costco has a big bag of them right now!), and beef burger patty with avocado and bacon. Breakfast, Lunch and Dinner- This is what I ate during my last NAET treatment 25 hour avoidance phase. There is a different list of "safe foods" with every treatment, depending on what you're avoiding, and they recommend that you limit yourself to just two or three foods, as the more variety you consume, the more energy it takes for your body to digest and ideally you just want to let your body's energy be as unhindered as possible so you can achieve optimal results. Fear Is A Liar

 Things have been a bit rough lately for me. You would think that at some point you would somehow get used to the rollercoaster ride of chronic illness, but it really doesn't get easier. Maybe you understand some things more, or learn to cope with symptoms, or give up on things ever going back to how they used to be, but the little comfort there is in the familiarity of "we've been here before" isn't enough to get you through it all.  I realized that maybe one reason it doesn't get easier to go through the ups and downs is because I have not lost hope. I have not stopped living the good days to their full potential. Maybe that makes the bad days hurt a little more, but if you can't embrace the good days, I think that's a sign of moving to the next level of despair.  Don't give up.
