Scrambled eggs with spinach and goat cheese and chives, GF toast with butter- nice and brown and crunchy, that's the way I love it.
 
Homemade GF chicken strips, sweet potato fries, green beans, carrot juice, and fried onion slices. I hate throwing away the leftover flour I from coating the chicken pieces, so I will sometimes use it to make onions rings or slices. Brian loves them!

Pot roast from one of our cows; grass fed, raised on our property, the flavor of this meat, especially the fat, is unbelievably good. I bake the roast with lots of sliced onions and garlic cloves because we like to eat them alongside the meat. Sides are roasted broccoli, honey and cayenne glazed carrots, and instant mashed potatoes made with cream, butter, parsley and a dash of garlic powder. My family was raving about this meal, which is so satisfying as a cook and mama. No whining that night!
My special dessert after the kids went to bed and Brian was out for the evening. Chuckanut Bay Cheesecake; it's gluten free, single serve and available at Fred Meyer. I grab a couple when they are marked down and stash them in the freezer for a treat that I don't have to make myself.

                          
Breakfast: Scrambled eggs with avocado, salsa, green onion, avocado. Homemade low carb biscuits with butter and honey. Leftover roasted broccoli. Hot herbal tea. Yummy.
Quick lunch for me and the kids- cauli puree, green beans and fried chicken tenderloins. Healthy, fast, and kid friendly.
Chicken pot pie casserole and GF biscuits. I used to make chicken pot pie casserole (no pie crust) all the time, but since peas (and sometimes potatoes) bother my tummy usually,  I don't make it that often anymore...mostly because I love it and I don't feel like watching my family enjoy it without me. 🙄

A huge turkey sandwich 😁 GF bread, avocado mayo, avocado slices, lettuce, and sliced turkey.

Taco dinner: shredded seasoned chicken, lettuce, refried beans, Darigold sharp cheddar, sour cream, cilantro, guacamole, salsa, shredded iceberg lettuce.
Quick and easy dinner- I picked up a frozen GF pizza, and while it was baking, I prepped fruit and veggies. I had some chicken drumsticks in the fridge so I warmed those up and made myself a salad too.


 Carrot raisins 😄 I roasted some purple carrots and they shrunk down and got so sweet and yummy. I don't care for raisins, but the texture of these seems very close to the real thing and they have a very dark, sweet taste..almost molasses-like. I really like them, but they are kind of weird.
 I made a big pan of short ribs,  which meant leftovers for days! So delicous.I can't even tell you how tasty this meat is.

Honey mustard chicken thighs, steamed broccoli, sweet potato fries(some got a little dark, being a good mama, I took the worst ones 🙄) and salad with HM dressing.
Family dinner adventure to MOD pizza. It was so good, especially the BBQ chicken. We love that we are finding more relatively healthy and fast food options for a night out or a quick meal. We had their gluten free crust and it was really good.
Late night snack- tea and GF toast with peanut butter and cinnamon and a soft boiled egg. Technically, the boiled eggs I've been making are actually steamed. I finally figured out the perfect timing to get them soft every time and peel easily. I steam them in my big stock pot that has a steamer basket;once the water is boiling in the pot I put the steamer basket full of eggs on top, cover and steam for ten minutes. Then I dump the eggs into very cold water and let them sit til they are cooled. Then refrigerate overnight; I believe this is what makes them so easy to peel. Brian loves having them in his lunch for work, so I've been making them 18 at a time, almost twice a week! I try to buy the Costco 5 dozen eggs to make it a little cheaper, but eggs are already a pretty cheap protein option. I love having  boiled (or steamed) eggs on salads too.
 
Used more of those short ribs to make a fast lunch. I warmed the meat in my cast iron skillet, which kind of fried it since it has quite a bit of fat. Then I added in some frozen, precooked brown rice, and some red enchilada sauce. I spooned the meat and rice over some lettuce and topped with onions, avocado,  salsa, a tiny bit of Kerrygold cheese and a few blue corn chips. My kids loved it too.
First meal to break an 18 hour fast. Cauli puree with avocado oil, salt and nutmeg, green beans,  tuna with avocado mayo and a soft boiled egg.

Dinner- I love making breakfast for dinner when I don't feel like cooking or have to make dinner fast. Scrambled eggs with spinach, kidney bean, bacon, and GF toast with cashew butter, honey and cinnamon. Dinner- steamed broccoli, Alexia's sweet potato fries (love that Costco has a big bag of them right now!), and beef burger patty with avocado and bacon. Breakfast, Lunch and Dinner- This is what I ate during my last NAET treatment 25 hour avoidance phase. There is a different list of "safe foods" with every treatment, depending on what you're avoiding, and they recommend that you limit yourself to just two or three foods, as the more variety you consume, the more energy it takes for your body to digest and ideally you just want to let your body's energy be as unhindered as possible so you can achieve optimal results. Fear Is A Liar

 Things have been a bit rough lately for me. You would think that at some point you would somehow get used to the rollercoaster ride of chronic illness, but it really doesn't get easier. Maybe you understand some things more, or learn to cope with symptoms, or give up on things ever going back to how they used to be, but the little comfort there is in the familiarity of "we've been here before" isn't enough to get you through it all.  I realized that maybe one reason it doesn't get easier to go through the ups and downs is because I have not lost hope. I have not stopped living the good days to their full potential. Maybe that makes the bad days hurt a little more, but if you can't embrace the good days, I think that's a sign of moving to the next level of despair.  Don't give up.
