WhatIEat#16


Family dinner-  "Enchi-sagna" is what Brian called it. I made enchiladas, except I was in a hurry, so I just put down a layer of corn tortillas, poured all the filling on top, and then another layer of tortillas, sauce and cheese.
I like to top my enchiladas with lots of lettuce, green onions, cilantro, avocado, salsa verde, sour cream, and salsa. Sometimes, I make sauce with sour cream, mayo, taco seasoning, green onion or dried chives, garlic powder
and onion powder. My kids like "Pink Sauce", which is just ketchup and sour cream mixed together, but its a definite thing here in our house. In fact, Sophie thinks it's her original invention and wants to bottle and sell it Lol
Cauliflower chowder and corncakes. The chowder is "loaded" style; sour cream, cheese, bacon, green onion.
The corn cakes happened because I wanted a side for the soup didn't have enough time to make cornbread.
Comfort food! Stompot, a Dutch dish of potatoes and greens. You can use kale or spinach (I prefer frozen chopped spinach for it's ease and texture.) Often it's topped with a Polish sausage, but ham is delicious as well.
Frittata, Paleo pumpkin waffles, sautéed spinach and tea. The waffles were from a new cookbook I got for Christmas, but they were supposed to be sweet potato waffles....But I was in a hurry and didn't have any mashed sweets on hand, so subbed in canned pumpkin puree. It worked great!
Date Night! Brian and went out for burgers, yum. I had a bacon avocado cheeseburger with a GF bun. And fries, of course.
Homemade Paleo Chocolate Cake, recipe from Against All Grain. Guilt free treat for me! OK, maybe with the ice cream it's not entirely guilt free, but I've been making it and eating it with no frosting or ice cream and it's super good all by itself. I find I always do better watching what I eat when I have a "safe treat" to satisfy cravings.
Lunch for the kids and I: Salmon and broccoli and green beans. Honey mustard sauce in the salmon, and some parsley and onion and garlic powder.
Family dinner- oven fried chicken drumsticks, green beans, leftover rice/spinach/mushroom/bacon risotto, and onion rings. More like onion strings I guess, but they were so tasty. I had leftover flour coating from the chicken and I had been craving onion rings but those are impossible to find gluten free, so I decided to try to make some. Brian was so happy. Sophie and Nathaniel loved them too.
Lovely, large dinner salad. Brian and I both had one after putting the kids to bed Sunday night. Butter lettuce, avocado, ham, white cheddar, honey mustard dressing, green onion, and a fried egg. And some plantain chips.
Breakfast for Sophie and Nathaniel. (I had my smoothie) Leftover corncakes, sausage and fried egg.
The risotto I mentioned earlier (mushroom, bacon, spinach, chicken) with beans and asparagus.
Family movie night! Homemade BBQ chicken pizza, homemade guacamole, chips and fruit and veggies. My family loves it when I make pizza, and I love that we can all eat it together....I will never forget how hard it was to have to sit and watch them eat fun food like nachos, pizza, and ice cream without me. So thankful for the healing God has done that allows me to once again enjoy these things with my family.

Dinner- I love making breakfast for dinner when I don't feel like cooking or have to make dinner fast. Scrambled eggs with spinach, kidney bean, bacon, and GF toast with cashew butter, honey and cinnamon. Dinner- steamed broccoli, Alexia's sweet potato fries (love that Costco has a big bag of them right now!), and beef burger patty with avocado and bacon. Breakfast, Lunch and Dinner- This is what I ate during my last NAET treatment 25 hour avoidance phase. There is a different list of "safe foods" with every treatment, depending on what you're avoiding, and they recommend that you limit yourself to just two or three foods, as the more variety you consume, the more energy it takes for your body to digest and ideally you just want to let your body's energy be as unhindered as possible so you can achieve optimal results. Fear Is A Liar

 Things have been a bit rough lately for me. You would think that at some point you would somehow get used to the rollercoaster ride of chronic illness, but it really doesn't get easier. Maybe you understand some things more, or learn to cope with symptoms, or give up on things ever going back to how they used to be, but the little comfort there is in the familiarity of "we've been here before" isn't enough to get you through it all.  I realized that maybe one reason it doesn't get easier to go through the ups and downs is because I have not lost hope. I have not stopped living the good days to their full potential. Maybe that makes the bad days hurt a little more, but if you can't embrace the good days, I think that's a sign of moving to the next level of despair.  Don't give up.
