Following my hair analysis, I was encouraged to give a low lectin diet a try in hopes that it will promote further gut healing and lower inflammation, helping to balance hormones and boost overall well being. ...I was a bit reluctant to start another new diet phase, but I am willing to give it a try, so here we go!
This was today's breakfast: Lamb meatballs, fried with some diced onion and grated sweet potato, seasoned with a dash of garlic and onion powders, sautéed kale, and cauliflower puree, seasoned with pink salt , nutmeg and a drizzle of avocado oil. Nourishing, satisfying and delicious!
Turkey, sliced avocado, lettuce, and avocado mayo roll ups.
Easy, fast, yummy.
Broiled asparagus, broiled broccoli, fried, grated sweet potato, and a crispy fried chicken thigh.
Breakfast scramble: Homegrown eggs, spinach, grated sweet potato, and avocado.
My chicken soup. My kids call it Chicken-Noodle Soup, since I shred the chicken and it takes the place of the noodles, so it's chicken noodles...get it? They think it's awesome and they gobble it up. :)
I've been experimenting with different paleo mug cake recipes (or no recipe) to find a good treat for myself. Low lectin and paleo are quite similar but low lectin also avoids most sweeteners that paleo allows, so I have been using a liquid stevia... It's ok, but I'm a little nervous to use a lot of it, since some people don't react to it very well, digestively.
This cake was good and had a very fluffy texture. I also have to use very dark chocolate- 72% or higher- so I've been working with that too. I need to get some Lily's chocolate I think. It's sweetened with stevia and I've been told it's very tasty.
Lovely, filling and flavorful salad.
Lettuce, boiled egg, avocado, turkey, my honey mustard poppyseed dressing, pink salt. Don't forget the pink salt! It adds so much to salads.
I made some guacamole. Just avocados, red onion; diced very small, and cilantro, and a pinch of salt. I ate it with Simple Mills paleo crackers (which I love), or with eggs.
Simple, but healthy and filling, bowl of cauliflower puree.
Crispy fried chicken thighs. I bet I could get my husband to do anything for me I he came home to these frying on the stove... They make your house smell amazing, and a cast iron skillet gets such a mouthwatering crust on these you won't believe they aren't coated with anything. That's right. Just a sprinkle of salt, maybe a dash of pepper. You just have to be patient and let them fry without peeking underneath or moving them or anything. I cover my pan with a sheet of paper towel to cut down on splattering.
Steak salad with HM dressing, side of guacamole and paleo crackers, carrot juice and tea. Is that a weird dinner?... Maybe, but my mouth and tummy were happy about it anyway. :)
More lamb meatballs with kale and sweet potato, and a side of roasted broccoli. The rest of the family had a gluten free cheese pizza, which I topped with spinach and ham and a sprinkle of gouda and drizzled with BBQ sauce. My kids LOVE my "homemade" pizza, and I love that it's not entirely junk food. They also had sliced apples on the side.

This mug cake was made following a recipe from Castaway Kitchen, a talented paleo/keto food blogger. (do a Google search to find her site)
It was quite good. It tastes better as it cools, so give it a few minutes to sit after cooking. Also, I will admit that since I went light on the stevia, and there is no sugar in the recipe, I did lightly drizzle it with Hershey's chocolate syrup (the cleaner, 5 ingredient version), which is not paleo or low lectin, but hey, sometimes you just need a little something sweet, and my tastebuds have already adjusted so it only takes a tiny bit of sweetener to make it taste good to me. (Brian said it was a little bitter by itself, even after the chocolate syrup. He had his with ice cream.)

Food prep, batch cooking; that's what makes healthy eating consistent and easy. I've been making a huge pot of this soup every week and then there's always something in the fridge ready to heat and eat. #win
