Beets

These are my breakfasts the last two mornings. They both contain beets. I admit, I do not enjoy eating beets....don't like the way they taste. BUT I am a grown-up, and that means that I have to do things pretty much every day that I don't like. And so, I can eat the beets. I think about how they will nourish my body and make me stronger, and how much my liver will love them. Sound weird? Well did you know that your thoughts and emotions while eating affect how your body uses that food? Mindfulness while eating helps us to digest better and absorb nutrients more effectively and helps us to feel well overall. It also helps us to recognize when we are full, hence less overeating (helpful for weight loss). When we pay attention to what our body is actually asking for, we will also be more satisfied, so less overeating, greater wellness. The more healthy whole foods you eat, the more your cravings will shift to healthy, while foods as well. A craving for chocolate could actually be your body asking for calcium, which can also be found in leafy greens. As you remove the junk food and eat more while foods, your body will recognize other forms of the nutrients and your cravings for junk food should be reduced. I have eaten spinach the last two mornings along with the beets, and guess what? I don't really like spinach either. BUT I want it...I know my body wants me to eat it, so I do. Again, grown-up. So, if you were looking for some tough love, here it is: You are in charge of your body and it's your job to care for it well. Eat the things you know will support that goal, even if you "don't like them." It's amazing what changes can take place when we nourish our bodies without whole, healthful foods. Be a good example to your kids. God has given us the amazing gift of our body, and treating it right is being a good steward of that gift.

My Fish Cakes Recipe -(Paleo)-

I am trying to incorporate more fish into my diet, and these delicious fish cakes are a new family favorite! They can be made with tuna or salmon, salmon having slightly more to offer nutritionally; high Omega 3 fats, vitamin D, and selenium. (and more!) Oatmeal cake, a classic recipe my mom would make when I was growing up. I have adapted it to suit my family's diet; it is gluten free, lower sugar, and I use pecans on top instead of cornflakes. It is so comforting and cozy to eat; the spices are warming and fragrant, and the texture is soft and moist. It is one of my favorite treats, and I'm so thankful to be able to enjoy it again with my family! A nice bowl of oatmeal, with molasses, chia seeds, cinnamon, cashew butter, butter, coconut oil, hemp hearts and soaked/sprouted pecans. This Is Going Well // DNRS review
