Grilled brat with brown rice and kale, and a side of sweet potato chips. (Trader Joes has yummy, relatively inexpensive, sweet potato chips)
The rest of my family had their brats on Trader Joes GF hot dog buns, which are also a lot cheaper than average.
Fried kale, breakfast sausage, fried egg and .....French Toast!!! because eggs are back and I can finally have more than one egg at a time! Definitely a treat though, cause GF bread isn't cheap.
This boring looking dish is leftover brown rice mixed with homemade chili verde (pork roast with verde sauce), and avocado, over butter lettuce. So yum. The chili verde had been in my freezer for awhile, but it warmed up perfectly delicious. And I would definitely recommend making your own verde sauce. I decided to give it a try after getting some tomatillos from a neighbor, and it was not too hard and very good.
Broiled asparagus with bacon bits and garlic salt, brown rice, and honey mustard chicken. I like to spoon the sauce over my rice...mmm. Funny story; my son will only eat asparagus if we bite the "flower part" off of it first. (Which doesn't bother me too much because that's my favorite part!) He also only wants to eat the stem part of broccoli, not the flower part...which is a little trickier, since the broccoli flower part is a lot larger that the asparagus flower part...I just make him eat it. He'll thank me someday, right?
A quick breakfast of leftover broccoli, honey mustard chicken, and brown rice. Once you get used to it, eating like this for breakfast feels very natural and enjoyable. I definitely notice that I feel better when I eat real, whole foods for breakfast and not the usual breakfast foods like cereal or pancakes or even oatmeal. I try to make sure the first thing in my tummy everyday is alkalizing and nourishing. So things like herbal tea, fresh squeezed lemon/lime juice in warm water, or carrot juice are good options. And yes, it sounds opposite, but lemon juice, which is very acidic is alkalizing, and sugar is acidic. Your body needs to maintain a PH level around 7, which is balanced in the middle between acidic and alkaline, and since processed foods are mostly acidic, its important to support the alkaline side as much as possible. And the first thing you eat in the morning basically sets up your blood sugar's reaction for the day, so again, its important when you're coming off of your overnight "fast" to put something healthy into your body. This one thing can end up making a huge difference in your overall health.
Butter lettuce salad with homemade honey mustard dressing, Beef patty and plantain chips. I like to make a sauce with ketchup, mustard, and a little onion powder...reminds me of Mc Donald's cheeseburgers, but without all the things I can't eat!
