WhatIEat#19

Happy Mother's Day to me! This mini GF cheesecake was one of the lovely gifts given to me by Brian, Sophie and Nathaniel. Fred Meyer carries them in their bakery case, in case you need to know. :) I topped it with some of my sister-in-law's tangy lemon curd.
Taco Breakfast Scramble: eggs, taco meat, spinach, and Kerrygold cheese, topped with salsa. And a mug of Chamomile tea. I've been craving protein lately so I've been eating a lot of eggs, and this is a nice way to mix it up a little.
Huge taco salad and a slice (or two) of GF pizza. I normally save the pizza for Brian and the kids as a convenient meal for the times I'm out and Brian has to feed them. But the kids weren't feeling well, so they weren't hungry, so I enjoyed a treat. I like the GF pizza from Costco, and I like to kick it up a notch by sprinkling it with Trader Joe's garlic salt and some dried oregano.
We went to my parent's house to celebrate Mother's Day, and I was feeling festive and decided to mix up a little drink. Lemonade and sparkling white wine, with sliced citrus and ice. Yummy! I was thinking of making something along the lines of sangria, but since I don't care for much fruit, I was left with just the citrus fruits, so it tasted like hard lemonade. Can't complain about that!
Saturday morning breakfast. I love it when Brian can be here for breakfast...enjoying a big breakfast together makes my heart happy. Even when Brian isn't here though, we still usually have a large breakfast. This meal consisted of eggs, hashbrowns, strawberries, microwave mug cake and orange or carrot juice. I also made Brian a yogurt "parfait". Very satisfying. And I don't feel a bit bad feeding my kids the cake for breakfast; its Paleo and has protein, fiber and low sugar.

First breakfast after coming home from vacation. Fritatta, leftover roasted potatoes, toast, and a smoothie for me. I'm obsessed with frittatas and I don't see that ending anytime soon! Healthy, easy, fast, cheap. #winning
We went to LAs Vegas for a family vacation, and we had a kitchen, so one night I made pork chops, mashed sweet potatoes, and broccoli. It was a little strange to be cooking and seasoning everything with just salt, pepper, and butter, but it turned out very tasty. Reminded me that sometimes its good to just keep things really simple.
Lunch out at Panda Express on our vacation. The kids loved the meat, but not the veggies or rice. Personally, I love the broccoli and sautéed mushrooms.
Another fun vacation meal- Shake Shack! I wish we had one of these nearby at home. So good. And they even had a GF bun. That always makes my day. Oh and their fresh lemonade was good too.
Fritatta, Chocolate waffles (our favorite paleo recipe), Hempler's bacon and fruit. So yum. And those lilacs- Hooray for springtime!

Dinner- I love making breakfast for dinner when I don't feel like cooking or have to make dinner fast. Scrambled eggs with spinach, kidney bean, bacon, and GF toast with cashew butter, honey and cinnamon. Dinner- steamed broccoli, Alexia's sweet potato fries (love that Costco has a big bag of them right now!), and beef burger patty with avocado and bacon. Breakfast, Lunch and Dinner- This is what I ate during my last NAET treatment 25 hour avoidance phase. There is a different list of "safe foods" with every treatment, depending on what you're avoiding, and they recommend that you limit yourself to just two or three foods, as the more variety you consume, the more energy it takes for your body to digest and ideally you just want to let your body's energy be as unhindered as possible so you can achieve optimal results. Fear Is A Liar

 Things have been a bit rough lately for me. You would think that at some point you would somehow get used to the rollercoaster ride of chronic illness, but it really doesn't get easier. Maybe you understand some things more, or learn to cope with symptoms, or give up on things ever going back to how they used to be, but the little comfort there is in the familiarity of "we've been here before" isn't enough to get you through it all.  I realized that maybe one reason it doesn't get easier to go through the ups and downs is because I have not lost hope. I have not stopped living the good days to their full potential. Maybe that makes the bad days hurt a little more, but if you can't embrace the good days, I think that's a sign of moving to the next level of despair.  Don't give up.
