Egg Perfection🐣

We LOVE soft boiled eggs in our house. 
And after much trial and error, trying all the tips you can find on the internet, I found the perfect way to make easy to peel, jammy-yolked eggs every time: I steam them. Yep, they're not actually boiled at all.

No hard, chalky, green yolks or rubbery white here! The steam cooks them more gently, and I have noticed the eggs are far less likely to crack during cooking as well.

I have a large stockpot that has a steamer basket I can put in, which sits a quite a bit over the water. It fits 17-18 eggs at once. I steam them for exactly 9 minutes and then plunge the eggs into cold water. Ideally you would have ice water but I never think ahead that much... but they turn out great anyway. I let them cool on a large bowl of water for a minute and then drain that water (which has warmed alot already) and refill the bowl with fresh cold water. After five minutes I drain and refill and swish the eggs around a bit just to evenly cool them. You can let them sit in the water til completely cooled or move them to the fridge to finish cooling.

I always use store bought eggs because eggs that are not super fresh, like the ones we gather daily from our hens, peel better. I usually make two batches, so we'll have like three dozen eggs ready to go. Also, you'll want to bring the water to a boil before adding the eggs to the steamer.

Brian loves them for his lunches. And if they aren't quite and soft and creamy as usual, he will let me know...I think he's getting spoiled. Lol

I love to eat these eggs with just a sprinkle of pink salt, but I also love them for topping salads or naan. They are also super amazing on toast that's been smeared with avocado, which is one of the ways my kids love to eat them.

If you want try to steam eggs but you don't have a pot as big as mine you might need to adjust the cook time a little... maybe try 7 or 8 minutes first and see how it goes.

By the way, the gorgeous eggs in the top picture are all collected fresh from our own chickens. I just can't get over how beautiful they are! Like snowflakes, each one is different, a work of art.  Every egg is a unique masterpiece designed by an intelligent Creator who didn't even let something as humble as an egg be dull or boring. Amazing.  That just makes me so happy!

Oatmeal cake, a classic recipe my mom would make when I was growing up. I have adapted it to suit my family's diet; it is gluten free, lower sugar, and I use pecans on top instead of cornflakes. It is so comforting and cozy to eat; the spices are warming and fragrant, and the texture is soft and moist.
