WhatIEat#32 (low lectin)

Salad loaded with grilled chicken, boiled eggs  and my HM dressing.

Late dinner- quick scramble of eggs, leftover sweet potato and spinach,  side of avocado, and a low carb, no sugar chocolate mug cake with French butter.

My chicken stew with Paleo naan cut into strips and added to stew likw noddles or dumplings. So yummy.

Dinner on the go- leftover cauliflower puree, roasted kale and turkey. 

Breakfast scramble- eggs, spinach, ground turkey, goat gouda (from Trader Joe's, SO good) and avocado
Family dinner- steamed mixed veg, beef burger with Comte cheese (raw French cow cheese), grilled onion slices, avocado mayo, lettuce, and grilled sweet potatoes.

Oh this was such a treat! Chocolate chip cookie made with compliant ingredients like coconut flour, tapioca starch, cassava flour, stevia drops...sandwiched between two cookies is coconut milk ice cream (no sugar added variety)

Late night dinner (after kids in bed) with Brian- grilled lamb chop with sweet potatoes and broccoli. Sometimes family dinner can be a bit stressful or crazy and its nice to be able to just eat in peace and quiet. Date Night In :)
Grilled chicken thighs seasoned with garlic and onion powder and rosemary, pink salt and pepper, and picked a a couple basil leaves and put them on the chicken too. Side of sautéed carrots, broccoli and spinach sprinkled with Pecorino Romano (sheep cheese)
Those paleo naan are a staple for me, if you couldn't tell...I use them in place of bread/ tortillas/chips/wraps. These tacos were filled with taco meat, homemade guacamole, and lettuce.
Good, healing chicken soup made with bone broth, a lot of herbs and spices, and veggies.

This meal was so good; the flavors just complimented each other so well. Grilled chicken thigh drizzled with HM sauce, roasted broc., and a few bites of goat gouda. Sweet, salty, savoury, bitter crunchy, creamy, tangy, soft, chewy,...everything you ever wanted in a meal.
Loaded salads are my life...make that salad delicious and filling! A variety of lean protein, healthy fats, seasoning, and veggies makes it good and so not boring.
Late night snack- paleo naan and crispy fried eggs. And tea in the sweetest dachshund mug :)

Veggie forward dinner of grilled asparagus, grilled onions, roasted broc. and a small naan and a small lamb patty. I crave these lamb patties. I even took some with me on a recent plane ride.
This meal was one I made at my sister's house- taco meat and sheep cheese and sauce made with taco seasoning in avo. mayo., served in a naan and over lettuce.
I went to visit my far away sister ( across the country and across the border) and I was happy to be able to help them move into a new house, especially since they recently had their second baby and also dealt with a few different sickness going through the family (something that I can relate to!) The first dinner we sat down to together, they told me it was their first time sitting together at the table to eat a meal since moving in a week before. There is something healing and restorative about sitting down together for a meal; it aids in digestion when we feel happy and calm and unhurried when eating, so make time for regular, focused meals. It might not always be possible to eat every meal like that, but make it part of your day to sit and enjoy a meal.
Naan with tuna in avo. mayo and lettuce. I have been craving tuna like crazy lately...having to pace myself with it Lol But its so easy and readily available and light but filling and tasty.
Dinner at my sister's house- pork roast seasoned with cayenne and honey. Sides or asparagus and baked sweet potato. Roast tip: don't add salt til after the meat has cooked for several hours, it will be softer and juicier. And cook it low and slow..I like to put my roasts in at 350 and cook for a couple hours and then lower temp to 325 or 300 for the rest of cooking time.
Eggs whisked with a spoonful of goat yogurt and a tsp of coconut flour, mixed with spinach and leftover roasted broc. and some goat gouda. Heated skillet on stove , poured in egg mixture and then put in oven til set. Such a satisfying breakfast.
Asparagus, broccoli, sweet potatoes, and fish cakes with HM sauce. Yum.

Dinner- I love making breakfast for dinner when I don't feel like cooking or have to make dinner fast. Scrambled eggs with spinach, kidney bean, bacon, and GF toast with cashew butter, honey and cinnamon. Dinner- steamed broccoli, Alexia's sweet potato fries (love that Costco has a big bag of them right now!), and beef burger patty with avocado and bacon. Breakfast, Lunch and Dinner- This is what I ate during my last NAET treatment 25 hour avoidance phase. There is a different list of "safe foods" with every treatment, depending on what you're avoiding, and they recommend that you limit yourself to just two or three foods, as the more variety you consume, the more energy it takes for your body to digest and ideally you just want to let your body's energy be as unhindered as possible so you can achieve optimal results. So this time I ate sweet potato, beef roast, and white rice. Yes, I felt a little guilty for the high amount of starch, but its only ...

Fear Is A Liar

 Things have been a bit rough lately for me. You would think that at some point you would somehow get used to the rollercoaster ride of chronic illness, but it really doesn't get easier. Maybe you understand some things more, or learn to cope with symptoms, or give up on things ever going back to how they used to be, but the little comfort there is in the familiarity of "we've been here before" isn't enough to get you through it all.  I realized that maybe one reason it doesn't get easier to go through the ups and downs is because I have not lost hope. I have not stopped living the good days to their full potential. Maybe that makes the bad days hurt a little more, but if you can't embrace the good days, I think that's a sign of moving to the next level of despair.  Don't give up.
