Welcome Autumn 🍁

 The weather has changed and I'm loving the cooler temperatures in the morning and evening. The leaves have already started falling, due to the extreme heat and dryness of this summer, so even though I'm a couple days early, Happy Autumn! In the last couple days I've made several pots of soup and tonight I made stuffing for dinner... I'm glad soup is back on the menu. It's been too hot to even think about sitting down to a steaming bowl of anything, but now that's it's beginning to cool off, soup actually sounds good. As I've said before, I love soup. It's easy, usually cheap, fast, and super healthy. Soup is pretty forgiving too, in the sense of not needing to follow a recipe for it to turn out. I pretty much never do actually, and I love the freedom and flexibility of it. I have my favorites though, that I make often, and I am surprised at how much my kids love soup too. Dinner- Grilled pork chops, mixed veggies, and roasted sweet potatoes. Made my Harvest soup for dinner for the first time in months last night. Also mixed up some biscuits...I don't know why, but I have the hardest time following a recipe. So the biscuits were loosely based on several recipes, plus just some add ins that I felt like would be good. And they were so yummy! Yay! Lol my experimenting doesn't always quite go how I hope it will, so I'm always super happy when it turns out even better than I expected. they were fluffy on the inside and crunchy/crumbly on the outside. And they didn't taste like eggs or bean flour or have the butter bake out into a greasy mess or have a gritty texture...Yeah, gluten free biscuits are tricky, recipe or no recipe. Garden Box Greens

I'm so excited about this! I've been meaning to plant some kale for months and finally got around to it last night🌱 I planted some spinach too. I grabbed some veggie starts from Free Meyer a couple days ago, and then Brian went and got me a load of top soil so I could repurpose this wooden toy chest into a planter box. Fresh greens right outside my door? Yes please! I've had kale keep growing all winter here, and I love being able to pick the baby leaves, since they are alot softer than the bigger ones. Also planted some lovely mums. Welcome Autumn!
